Ingredients:
1 cup chickpea flour (besan)
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup water
1 tablespoon oil, plus more for frying
1 cup yogurt, beaten
1/4 teaspoon cumin powder
1/4 teaspoon ground coriander
1/4 teaspoon garam masala
1/2 teaspoon red chili powder
1 tablespoon chopped cilantro
Instructions:
1. combine the chickpea flour, baking soda, and salt in a bowl. Add in the water and oil and mix until well combined. The mixture should be thick but pourable.
2. In a separate bowl, combine the beaten yogurt with the cumin powder, ground coriander, garam masala, red chili powder, and chopped cilantro.
3. Heat 1-2 tablespoons of oil in a large frying pan over medium heat. Once hot, drop small spoonfuls of the chickpea batter into the pan. Use the back of the spoon to flatten each one slightly.
4. Fry for 2-3 minutes per side, or until golden brown and crisp. Remove from the pan and drain on a paper towel-lined plate.
5. To assemble, spoon a small amount of the yogurt mixture into the center of each Dahi Baray. Serve immediately with Yogurt Chutney or your favorite dipping sauce.
Yogurt Chutney:
1 cup yogurt, plain or mint-flavored
1/4 teaspoon ground cumin
1 tablespoon chopped cilantro
1 green chili, seeded and finely chopped
1 clove of garlic, minced
1/4 teaspoon salt

1. Combine all ingredients in a blender or food processor and blend until smooth.
